AFRICAN GASTRONOMY T he cuisines of sub-Saharan Africa represented in the capital have long consisted of a few clas- sic dishes like mafé, yassa, and ndolé, and have ge- nerally been found only in hidden neighbourhood canteens. Now, African dishes and ingredients like hibiscus juice and cassava our are leaving the shadows to claim a place in restaurants and gour- met grocers. Last September, the fourth edition of the Food Temple Africa festival put Africa in the spotlight at the Carreau du Temple by the Louvre. A new generation of chefs is drawing on African roots to create a new gastronomy. Here are three gourmet outposts offering a bold, creative update on traditional culinary heritage. L e mafé, le yassa ou encore le ndolé. Long- temps, la gastronomie subsaharienne s’est résumée à quelques plats totems dans la capitale. Mitonnée au sein de cantines de quartier, elle demeurait dans l’ombre de ses cousines asia- tique, levantine ou sud-américaine. Désormais, les produits du répertoire culinaire africain, à l’image du jus d’hibiscus ou de la farine de manioc, s’in- vitent dans nombre de restaurants ou d’épiceries. En septembre dernier, la quatrième édition du fes- tival Food Temple Africa les mettait à l’honneur au Carreau du Temple. Mieux, une nouvelle géné- ration de chefs aux racines africaines s’emploie à « gastronomiser » la cuisine de leur continent. LE LIEU : Une trentaine de couverts dans un cadre sans ostentation. L’AMBIANCE : Décontractée. AU MENU : Le chef Youssouf Sokhna met à pro t son expérience au sein de prestigieuses maisons (Alléno Paris, La Fontaine Gaillon, etc.) pour insu er quelques touches africaines à la gastronomie française… ou l’inverse! Incontournables, son œuf bio parfait et mousseline de patates douces, ou son Thieb Dien de poisson, anqué de légumes. Menu: 24,50 €. NOTRE CONSEIL : Goûtez au baba au baobab et sa crème légère à la vanille des Comores. CHEZ VOUS : À emporter, plat gourmet (17 €), plat africain (13 €) ou assiette végétarienne franco-africaine (12 €). MENU: Chef Youssouf Sokhna honed his skills in prestigious kitchens (Alléno Paris, La Fontaine Gaillon) and now combines African touches with classic French gastronomy or vice-versa! Try his sublime organic eggs with sweet potato mousseline or sh Thieb Dien and veggies. Menu: €24.50. OUR TIP: Don’t miss the baobab baba with light cream and Comoros vanilla. THE PLACE: 30 seats in a discreet setting. AMBIANCE: Relaxed.

LE LIEU : Une salle au décor épuré où se côtoient bois et ivoire, sur un doux fond de musique Motown. L’AMBIANCE : Feutrée mais pas guindée. AU MENU : Passé par les cuisines du Royal Monceau et du Shangri-La, Mory Sacko rêve de décrocher une étoile Michelin en mêlant habilement cuisines africaine, française et nippone. Il procède par nes touches, à l’image de son poulet yassa, une poularde du Perche avec crème de riz, oignon de Rosco entier con t, condiment ail-citron noirs, agrume yuzu et pomélo con t. Menus: 45-80 € (déjeuner), 80-100€ (dîner). NOTRE CONSEIL : Les couples opteront pour les deux tables de la romantique alcôve bleu nuit. CHEZ VOUS : Faites-vous livrer une o re snacking léchée (19-23 €), tel le poulet jaune des Landes frit. THE PLACE: Minimalism and soft Motown music. AMBIANCE: Cosy without being cramped. MENU: Mory Sacko learned the ropes in such prestigious kitchens as the Royal Monceau and the Shangri-La. His skillful blend of African, French, and Japanese gastronomy is ripe for a Michelin star. Sacko's ne touches and far- ung ingredients exalt dishes like chicken yassa with cream of rice, candied Rosco onion, black garlic-lemon condiment, yuzu, and candied pomelo. Menus: lunch €45-€80, dinner €80-€100. OUR TIP: Couples, reserve a romantic alcove table. AT HOME: Order a selection of nger food (€19-€23), including fried golden Landes hen.

LE LIEU : Un établissement de poche à la décoration chaleureuse, avec terre cuite au mur et chaises en teck. L’AMBIANCE : Tamisée, sur fond de musique africaine. AU MENU : Bien qu’autodidacte, le chef Elis Bond hisse sa cuisine africaine, très graphique, au niveau de la haute gastronomie française. Il met à l’honneur des ingrédients souvent inconnus des Parisiens tels que le mintoumba, un pain de manioc fermenté, fumé et mariné, escorté ici de girolles et de cèpes charnus. Menus: 30 € (déjeuner), 40-50 € (dîner). NOTRE CONSEIL : Emportez les produits d’épicerie du restaurant, comme ce foie gras aux crevettes séchées du Cameroun et poivre de Penja (30 € les 200 g). CHEZ VOUS : Chaque semaine, le chef propose un nouveau menu (30 €) à emporter (10 € la livraison). THE PLACE: A warm decor in terracotta and teak. AMBIANCE: Quiet and cosy with African music. MENU: Self-taught chef Elis Bond raises his compelling African dishes to haute cuisine heights via little-known ingredients like mintoumba, a fermented, smoked, and marinated cassava bread accompanied by chanterelle and porcini mushrooms. Menus: lunch €30, dinner €40-€50. OUR TIP: Snap up the speciality shop ingredients like foie gras with dried Cameroon shrimp and Penja pepper (200 g/7 oz, €30). AT HOME : The chef proposes a new take-away menu every week (€30; delivery €10).
